His expertise lies in Indigenous Food Systems, with a focus on Traditional and Underutilized local food products, as well as the Green Valorization of Agro-Aquatic residues for High Value purposes. Additionally, he specializes in Biomolecular Interactions and their Applications in Food Systems, Designer Diets for Enhanced Health Benefits, and food safety. With a notable portfolio, Dr. Anil has authored 7 patents across multiple jurisdictions including the US, World Patents, EU, Canada, and India. His scholarly contributions extend to over 200 refereed international journal articles, boasting an impressive h-index of 45 and over 8030 citations. Moreover, he has penned more than 65 book chapters, edited and authored 11 books, and contributed to several International conference His extensive international experience encompasses research and consultancy endeavors in countries such as New Zealand, Spain, Japan, Nepal, India, Vietnam, Cambodia, Laos, Indonesia, Malaysia, Bangladesh, Germany, and Austria, among others.
